During steam peeling, the fruit to be peeled is exposed to high temperatures in a pressurised container for a short time. After that, machines downstream rub off the nearly loose peel and/or wash them. The surface of the peeled fruit and vegetable is smooth.
The water under the peel is heated to above 100 °C. The blow-off system then causes a sudden drop in pressure by which the water turns into steam, and the potato peel is loosened. The peeled product is subsequently transported to the next step in the process via a discharge screw.
This high pressure steam heats the water beneath the skin of the potato. When the pressure is then released from the vessel, this water rapidly expands and loosens the peel from the flesh of the potato. Typically, the potatoes are then fed into a separate machine that scrubs away the loosened skin.
This process can be used for peeling several different vegetables, including Potato Processing in French Fries production line, carrots, beets, pumpkin, sweet potato, kohlrabi, and root celery. It is also used to peel fruits such as apples, which naturally have high moisture. Some of the main benefits of steam peeling are high quality and process efficiency.
Steam peeling is carried out either as a batch-wise or a continuous process. The raw materials (roots, tubers) are treated in a pressure vessel and exposed to high-pressure steam (180°C to 200°C). In the case of tomatoes, the temperature may be lower (120 -130°C).
